It can be almost as big an event as Christmas dinner itself – deciding what to do with the left overs the next day! When it comes to up-cycling left over Christmas Dinner veg, in our house there is no contest, it has to bubble and squeak (so-called because of the bubbling and squeaking noises it makes while cooking apparently!). And what could be easier?
Today’s bubble and squeak consisted of roast potatoes, honeyed parsnips and sprouts… Thoroughly mash your chosen veg together, then take a heavy frying pan, and over a medium-high heat melt around 50g salted butter (it’s Christmas you can start the diet in January)!… Once the butter is frothing slightly, chuck in your cold veg, and using a fish-slice, press it down as it cooks. After 3-5 minutes, place a plate over the top, flip the best ever bubble and squeak onto the plate, and then a little like you do with a Spanish Omelette, slide it carefully back into the pan for another 3-5 minutes (it doesn’t matter if it breaks up by the way, just press it back into the pan again. Flip back on to an oven proof plate, and stick in an oven to keep warm whilst you get on with frying a few eggs.
Eat with left over turkey (or stuffing and pigs in blankets in our case) and a glass of cold beer. Almost as enjoyable as the big day’s lunch itself!

We had our roast potatoes fried up with bacon and eggs yesterday morning – yummy. Then I stir fried the leftover veg later on in the day. Should have just shoved the lot in together as you’ve done!
