Matcha, that fine powdered green tea so inherent to the Japanese tea ceremony, is used in thousands of things. From the immaculately served bowls of exquisitely coloured frothy tea, to Matcha flavoured cakes, sweets, icecream and even noodles. If you’re not overly keen, but you are about to visit Japan, may I suggest you train yourself to try to like it somewhat beforehand, as there really is no getting away from it once you’re there…
Matcha tea itself can be something of an acquired taste, but is apparently super high in antioxidants, more so than usual green tea, and even blueberries. So if you’re about to put it in something a little bit naughty like the recipe below, you can kind of pretend it’s still good for you.
I think Matcha goes perfectly with white chocolate. I was going to make some Matcha macarons with a white chocolate filling, and then I discovered that my mother had actually used all of the icing sugar for my birthday cake, so that was that idea out of the window (but I can hardly complain about that can I? It was a good cake!). So instead, may I present you with White Chocolate and Matcha Brownies?! These are not meant to be “cakey” brownies. They are meant to be crunchy on the outside, and super stodgy in the middle, and so so rich that I am not sure whether it would actually be possible to eat more than one slice in a sitting. I may well have to test that theory however.
White Chocolate & Matcha Brownies: –
- 200g good quality white chocolate;
- 100g butter;
- 125g sugar;
- 1tablespoon Matcha powder;
- 2 medium eggs;
- 50g plain flour.
Heat oven to 190DecC. Grease and line a small brownie tin. In bowl over a pan of boiling water, melt the chocolate and butter together and leave to cool to room temperature. Add the sugar, mix well and then stir in the Matcha powder. Add the two eggs, mixing thoroughly, and then fold in the flour. Pour into the tin and bake for 25/30 minutes. Cut, cool, and then pretend it’s so rich that people could only possibly manage a teeny tiny slice, then save the rest for yourself!

I just got back from a trip to Korea, which means that I have a healthy supply of matcha. In Seoul I had a very memorable green tea cake with flakes of white chocolate. Brilliant. I’m certainly sold on this match and I look forward to making these brownies.
