what better than a little comfort food from home?<\/p>\n<p style=\"text-align: justify;\">So without further ado,\u00a0 I give you the humble English Muffin&#8230;\u00a0 Perfect with just about anything, and totally unavailable over here&#8230; unless of course you make your own!\u00a0 You can find this recipe in The Great British Book of Baking, which was one of my Christmas presents last year. \u00a0\u00a0 Any book that promotes British baking automatically gets awarded pride of place on my vastly over stuffed (and therefore slightly precarious) recipe book shelves.\u00a0 If you are from the British Isles, but no longer &#8220;at home&#8221; &#8211; you need this book in your life.\u00a0 Trust me.\u00a0\u00a0\u00a0\u00a0 A slightly adapted version of the recipe below&#8230;<\/p>\n<p style=\"text-align: justify;\">We ate them with strawberry jam, cheese and Marmite (accompanied with boiled eggs).\u00a0 One of us might have insisted on all three toppings at once, and claimed it tasted good &#8211;\u00a0 although this might have been because his mother wouldn&#8217;t let him have another one until it had gone&#8230;<\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/www.thesojournseries.com\/bavaria\/english-muffins\/english-muffins\/\" rel=\"attachment wp-att-4258\"><img data-attachment-id=\"4258\" data-permalink=\"https:\/\/www.thesojournseries.com\/bavaria\/english-muffins\/english-muffins\/\" data-orig-file=\"https:\/\/www.thesojournseries.com\/bavaria\/wp-content\/uploads\/2013\/02\/English-Muffins-.jpg\" data-orig-size=\"1024,1024\" data-comments-opened=\"1\" data-image-meta=\"{&quot;aperture&quot;:&quot;0&quot;,&quot;credit&quot;:&quot;&quot;,&quot;camera&quot;:&quot;&quot;,&quot;caption&quot;:&quot;&quot;,&quot;created_timestamp&quot;:&quot;0&quot;,&quot;copyright&quot;:&quot;&quot;,&quot;focal_length&quot;:&quot;0&quot;,&quot;iso&quot;:&quot;0&quot;,&quot;shutter_speed&quot;:&quot;0&quot;,&quot;title&quot;:&quot;&quot;}\" data-image-title=\"English Muffins\" data-image-description=\"\" data-image-caption=\"\" data-medium-file=\"https:\/\/www.thesojournseries.com\/bavaria\/wp-content\/uploads\/2013\/02\/English-Muffins--300x300.jpg\" data-large-file=\"https:\/\/www.thesojournseries.com\/bavaria\/wp-content\/uploads\/2013\/02\/English-Muffins-.jpg\" loading=\"lazy\" class=\"aligncenter  wp-image-4258 pp_post_image\" alt=\"English Muffins\" src=\"http:\/\/www.thesojournseries.com\/bavaria\/wp-content\/uploads\/2013\/02\/English-Muffins-.jpg\" width=\"727\" height=\"727\" srcset=\"https:\/\/www.thesojournseries.com\/bavaria\/wp-content\/uploads\/2013\/02\/English-Muffins-.jpg 1024w, https:\/\/www.thesojournseries.com\/bavaria\/wp-content\/uploads\/2013\/02\/English-Muffins--150x150.jpg 150w, https:\/\/www.thesojournseries.com\/bavaria\/wp-content\/uploads\/2013\/02\/English-Muffins--300x300.jpg 300w\" sizes=\"(max-width: 727px) 100vw, 727px\" \/><\/a><\/p>\n<p style=\"text-align: left;\"><em>350g Strong White Bread Flour (type 1050), 100g Plain White Flour (type 405),<\/em><\/p>\n<p style=\"text-align: left;\"><em>1 teaspoon fine grain salt, 7g dried yeast (hefe),<\/em><\/p>\n<p style=\"text-align: left;\"><em>225ml lukewarm water, 150ml lukewarm milk<\/em><\/p>\n<p style=\"text-align: left;\"><em>A couple of tablespoons of cornmeal&#8230;<\/em><\/p>\n<ul>\n<li><em>Mix flours in a bowl with the salt and yeast.\u00a0 Make a well, add liquids and mix until you get a soft dough.\u00a0 Knead until no longer sticky (around 10 minutes);<\/em><\/li>\n<li><em>Cover with a damp cloth and leave to rise for an hour in a warm place until doubled in size;<\/em><\/li>\n<li><em>Knead again on a floured surface for five minutes;<\/em><\/li>\n<li><em>Cover the bowl and return it to its warm resting place for a further 30 minutes;<\/em><\/li>\n<li><em>Divide into eight balls of dough, space well apart onto a tray dusted with half the cornmeal, and sprinkle the rest over them.\u00a0\u00a0 Lightly oil another tray and place on top (which gives them that flat appearance we all know and love!).\u00a0 Return to warm place for yet another 30 minutes;<\/em><\/li>\n<li><em>Next for the fun part &#8211;
