Forget recipe books and cookery programmes – in my experience, the best recipes come from friends. Tried and tested, and very often handed down (or across) these recipes have been made countless times usually for a very good reason, and this one is no exception to that rule!!
With the UK government recommending that we now eat 7-10 portions of fruit and vegetables every single day, I am sorry but cake has to come into it somewhere, and this Pineapple & Coconut Cake is one recipe where you really can have your cake and eat it so to speak…
Ingredients:
150g softened unsalted butter;
150g caster sugar;
2 eggs;
150 plain flour;
1 teaspoon baking powder;
3 tablespoons dessicated coconut;
1 large tin of pineapple rings;
Heat a fan oven to 200 degrees. Cream the butter and sugar together (starting off with the butter and adding the sugar bit by bit). Add the eggs, stirring well after each one. Fold in the flour, baking powder and coconut. Pour into a lined 12″ spring form baking tin, and arrange the pineapple slices on the top, then bake for 35 minutes. Depending on the size of the tin, and your oven, cooking times may vary, so check that the cake is done (with a skewer) before taking it out as it might well need a little longer… Leave to cool before removing it from the tin, slice and serve. I might rename this Disappearing Cake, as I promise you it doesn’t last very long… Thanks for the introduction lovely Sandra, and for kindly sharing the recipe! :)

Oooh pineapple is about the only fruit all four of us love (Mr A is allergic to most fruits) have to try this – tried and tested always wins in my book! Printing off now x
